Watermelon and Feta Stacks
INGREDIENTS
1 Small 5-8-pound seedless watermelon
1 Pound block feta cheese, cut into 1-inch squares (1/4 inch thick)
1 Cup basil leaves
3 Tablespoons olive oil
¼ Teaspoon salt
¼ Teaspoon pepper
40 Toothpicks
INSTRUCTIONS
Cut watermelon into 1-inch cubes (about 40).
Stack a feta cube on top of each watermelon cube.
Top with a fresh basil leaf, and secure with a toothpick.
Transfer to platter; sprinkle with olive oil, salt and pepper.
Serve immediately.
